Matzo Meal Popovers

Ingredients
  

  • 1 ¼ cup Water
  • ½ cup Canola oil + oil for pan
  • 1 ½ cup Matzo meal
  • ¾ tsp Kosher salt
  • ¼ tsp Sugar
  • 4 Large eggs

Instructions
 

  • Preheat oven to 425.
  • Spoon about ¼ tsp oil into each cup of a 12-cup muffin pan.
  • In a large saucepan, bring water to a boil and remove from heat.
  • Add ½ cup oil, matzo meal, salt, and sugar and stir using a wooden spoon (the dough will be thick and clumpy).
  • Let sit for 2 minutes.
  • Using the wooden spoon, stir in eggs one at a time, beating until they’re fully absorbed.
  • Heat the muffin pan in the oven for 2 minutes.
  • Remove the muffin pan from the oven and carefully spoon dough into the cups (filling about halfway).
  • Bake 22 – 25 minutes or until popovers are puffed and golden brown.
