Matzo Meal Popovers
Best served warm with honey
Ingredients
- 1 ¼ cup Water
- ½ cup Canola oil + oil for pan
- 1 ½ cup Matzo meal
- ¾ tsp Kosher salt
- ¼ tsp Sugar
- 4 Large eggs
Instructions
- Preheat oven to 425.
- Spoon about ¼ tsp oil into each cup of a 12-cup muffin pan.
- In a large saucepan, bring water to a boil and remove from heat.
- Add ½ cup oil, matzo meal, salt, and sugar and stir using a wooden spoon (the dough will be thick and clumpy).
- Let sit for 2 minutes.
- Using the wooden spoon, stir in eggs one at a time, beating until they’re fully absorbed.
- Heat the muffin pan in the oven for 2 minutes.
- Remove the muffin pan from the oven and carefully spoon dough into the cups (filling about halfway).
- Bake 22 – 25 minutes or until popovers are puffed and golden brown.
