Ingredients
  

  • 2 lbs Lean ground beef
  • 2 lbs Ground chicken
  • 2 tbsp Cumin
  • 4 tbsp Chili powder
  • ½ tsp Cayenne pepper
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 tsp Paprika
  • 1 tsp Kosher salt
  • ½ tsp Black pepper
  • 28 oz Petite diced tomatoes (1 large can, rinsed and drained)
  • 4 Small tomatoes, diced
  • 4 Jalapeño,diced (about ½ cup)
  • ¾ cup Onion, diced
  • 12 oz Tomato paste
  • 1 can Chipotle peppers in adobo sauce

Instructions
 

  • Combine meat and seasonings in a large pan, add water to cover.
    2 lbs Lean ground beef, 2 lbs Ground chicken, 2 tbsp Cumin, 4 tbsp Chili powder, ½ tsp Cayenne pepper, 2 tsp Garlic powder, 2 tsp Onion powder, 1 tsp Paprika, 1 tsp Kosher salt, ½ tsp Black pepper
  • Bring to a boil, then reduce heat and simmer for 30 min, stirring occasionally.
  • Meanwhile drain and rinse the canned tomatoes and add to crock pot with the tomatoes, jalapeño,and onion.
    28 oz Petite diced tomatoes, 4 Small tomatoes, diced, 4 Jalapeño,diced, ¾ cup Onion, diced
  • Allow the meat to cool, then drain, preserving the liquid.
  • Add the meat to crock pot with the tomato paste, 4 chipotle peppers (diced), and 2 tsp of the adobo sauce; Stir.
    12 oz Tomato paste, 1 can Chipotle peppers in adobo sauce
  • Cook on low setting overnight.
  • With the preserved liquid, skim off fat, and add to the crock pot as needed for the desired consistency.
