Combine meat and seasonings in a large pan, add water to cover.
2 lbs Lean ground beef, 2 lbs Ground chicken, 2 tbsp Cumin, 4 tbsp Chili powder, ½ tsp Cayenne pepper, 2 tsp Garlic powder, 2 tsp Onion powder, 1 tsp Paprika, 1 tsp Kosher salt, ½ tsp Black pepper
Bring to a boil, then reduce heat and simmer for 30 min, stirring occasionally.
Meanwhile drain and rinse the canned tomatoes and add to crock pot with the tomatoes, jalapeño,and onion.
28 oz Petite diced tomatoes, 4 Small tomatoes, diced, 4 Jalapeño,diced, ¾ cup Onion, diced
Allow the meat to cool, then drain, preserving the liquid.
Add the meat to crock pot with the tomato paste, 4 chipotle peppers (diced), and 2 tsp of the adobo sauce; Stir.
12 oz Tomato paste, 1 can Chipotle peppers in adobo sauce
Cook on low setting overnight.
With the preserved liquid, skim off fat, and add to the crock pot as needed for the desired consistency.
